(Eggs in Spiced Tomato Sauce)

There’s nothing quite like the sight of eggs simmering gently in a rich, spiced tomato sauce. It’s comfort food with a little kick. Perfect for breakfast, brunch, or a cozy dinner.
Ingredients
4 large eggs
1 tbsp olive oil
1 onion, chopped
1 red bell pepper, chopped
2–3 garlic cloves, minced
1 tsp ground cumin
½ tsp smoked paprika
1 can (400g) chopped tomatoes
Salt & pepper to taste
A handful of chopped parsley or coriander
Crusty bread or pita, for serving
Instructions
Heat olive oil in a skillet over medium heat. Add onion and pepper, and sauté until soft and glossy.
Stir in garlic, cumin, and paprika, cook just until fragrant.
Add the tomatoes and a pinch of salt and pepper. Let it simmer for 8–10 minutes until slightly thickened.
Make little wells in the sauce and gently crack an egg into each one.
Cover and cook on low until the whites are set and yolks still soft (5–8 minutes).
Sprinkle with fresh herbs and serve with crusty bread for dipping, it’s a “scoop-up-every-bit” kind of meal.
