(Eggs in Spiced Tomato Sauce)

There’s nothing quite like the sight of eggs simmering gently in a rich, spiced tomato sauce. Its comfort food with a little kick. Perfect for breakfast, brunch, or a cozy dinner.


Ingredients


  • 4 large eggs

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 1 red bell pepper, chopped

  • 2–3 garlic cloves, minced

  • 1 tsp ground cumin

  • ½ tsp smoked paprika

  • 1 can (400g) chopped tomatoes

  • Salt & pepper to taste

  • A handful of chopped parsley or coriander

  • Crusty bread or pita, for serving


Instructions


  • Heat olive oil in a skillet over medium heat. Add onion and pepper, and sauté until soft and glossy.

  • Stir in garlic, cumin, and paprika, cook just until fragrant.

  • Add the tomatoes and a pinch of salt and pepper. Let it simmer for 8–10 minutes until slightly thickened.

  • Make little wells in the sauce and gently crack an egg into each one.

  • Cover and cook on low until the whites are set and yolks still soft (5–8 minutes).

  • Sprinkle with fresh herbs and serve with crusty bread for dipping, it’s a “scoop-up-every-bit” kind of meal.
